Super Chocolatey Scan Bran Cake (from the SW website)


OK, OK, so a cake made from Scan Bran is never going to taste quite as delicious as a real chocolate cake! But for only 11.5 syns for the whole cake, this one is a fantastic rival.

The recipe below is from the Slimming World website.

Ingredients
5 Scan Bran
3 beaten eggs
1 level tbsp golden syrup
1oz cocoa powder
½ mug sweetener

1. Soak the Scan Bran in boiling water to soften. Then drain and mash.
2. Mix all the ingredients together and pour into a microwavable bowl.
3. Microwave on high for 7 minutes. When cooked the cake will be springy to the touch and will have pulled away from the side.
Tip: Chef's tip: For a free topping, pile with (defrosted) frozen forest fruits or top with chocolate spread (4½ Syns per tbsp).

It's just 11½ Syns for the whole cake and can be divided into as many portions as you like.

Chili Con Carne for a chilly day!


This Chili Con Carne is completely free on Green or Extra Easy.

It is brilliant as it is so easy to cook. Just put it all in a big pot or slow cooker, and then let it cook.  Boil the rice nearer the time you want to serve, and its done!

Ingredients:
Quorn Mince/ Extra Lean minced beef
One large onion
Can of chopped tomatoes
Can of kidney beans
Can of baked beans
Chili powder (to taste)
Red chillies (to taste)

I also added 28g cheddar and some soy sauce on top. Yummy!

Dippy egg and soldiers. The perfect comfort snack.


Two dippy soft boiled eggs and soldiers (2 slices of wholemeal bread from a 400g loaf, 1 healthy extra B choice) .   Filled that little gap left in my tummy this evening!

Spice sensation cheesy cous cous salad

I have this for my lunch most days.  It is really tasty, and so easy to take to work.  I chop the salad items up in the morning and put them in a lunchbox. Then at lunch time, just add boiling water to the Ainsley Harriot Spice Sensation cous cous (1 Syn). Once it has soaked up all the water (approx 3 minutes later) I add the salad items, and it's ready to eat! 

This meal contains;
Ainsley Harriot Spice Sensation sachet (1 syn)
Chopped cherry tomatoes
Rocket
Chopped sweet pepper
28g Cheddar (1 Healthy Extra A choice)

Sometimes I also add cucumber, boiled egg, and Quorn Sausage (1 syn).

My Breakfast, Slimming World style!!

This was my breakfast this morning.

Eggs fried in Fry light (Free)
Half a tin of baked beans (Free)
x 2 slices of wholemeal bread from a 400g loaf (1 Healthy Extra B choice)

If I had more time I would have added some grilled lean bacon, mushrooms and grilled tomato. Delicious!

Curly Wurly Scan Bran cake (from the SW Website)

This recipe is from the Slimming World Website.  It is 12 syns for the whole cake.
I was very impressed that a cake could be made in 7 minutes in the microwave in a Pyrex bowl!!!

It inspired me to try the other scan bran recipes (the chocolate one is amazing!), and even made up my own raisin and cinnamon cake which I will post up here soon.

To make the Curly Wurly Scan Bran  cake you will need;
4 Scan Bran
2 eggs
3 or 4 tbsp sweetener (to taste)
1 sachet Belgian Choc Options
26g Curly Wurly bar

1. Soak the Scan Bran in boiling water to soften. Then drain and mash.
2. Beat the eggs and stir into mix, along with the sweetener and Belgian Choc Options
3. Chop the Curly Wurly into pieces and add to the mix
4. Pour the mixture into a microwavable bowl and cook for around 6 minutes. When cooked the cake will be springy to the touch and will have pulled away from the side.



Protein packed salad to keep you going!

Salads never usually keep me full for long. I like carbs and lots of them!
So I decided to change my lunch times by making a protein packed salad that would keep me full, and not reaching for the chocolate for energy.

This salad is full of the protein rich eggs, cheese (28g as a healthy extra A choice) and Quorn sausages (1 syn each on green, but could be replaced with syn free grilled lean bacon if doing extra easy), which combined with rocket leaves, cherry tomatos and chopped sweet red pepper made for a super tasty lunch time.

Chinese Noodles (Syn free on green or extra easy)

These noodles were easy to make, and completely Syn free as I used soy sauce instead of a packet/jar sauce.

1) Boil plain dry noodles in water and approx 2 tablespoons of soy sauce.

2) At the same time, spray the frying pan with Fry Light, and cook through Quorn steak pieces or chicken style pieces.  When they are nearly cooked, add some chopped onions to soften.

3) When noodles are boiled, drain the excess water off, and then stir in another 2 tablespoons of soy sauce with the cooked Quorn pieces and onion.

Whilst this was tasty, it will never be as good as a real chicken chow mein! However for 0 syns, its a great alternative!

If you are not vegetarian and are doing extra easy, you could use chicken instead of Quorn pieces.




Super Filling FREE Cheese and Tomato Omelet

This very tasty omelet is quick and easy to make, and keeps you full for hours!!  It is completely free and uses one Healthy Extra A choice.

1) Whisk x 3 eggs and  62 ml of semi skimmed milk (1/4 of a Healthy Extra A Choice).

2)  Pour into a frying pan which has been sprayed with fry light. Put on a low heat.

3) Place on chopped chives, sliced tomatoes and grate on 21g Cheddar (the other 3/4 of your Healthy Extra A Choice!)

4) Heat until the base looks firm and the top is slightly wobbly, and then place under the grill to cook and brown off the top.

5) Once the top is brown, serve and eat your lovely free omelet which will keep you full for hours and hours! 

I really enjoyed this omelet. It took about 20 minutes to prepare, but kept my tummy full, and gave me energy to last a busy shift.  I will definitely be making this again.

Yummy Philadelphia Pasta

Preparation time approx 5 mins.  Cooking time Approx 20 mins.

Uses 1 x Healthy Extra A choice (For Milk and Cheddar cheese)
         1 x healthy extra B choice  (For Philadelphia light cream cheese)
         2 syns if adding x2 Quorn Sausage.
(If doing Extra easy you could add grilled lean bacon and this would be free!)

Cook and drain pasta.

Then add basil, chives, 71g garlic Philadelphia light as a healthy extra b choice.

Stir in 62ml semi skimmed milk and 21g Cheddar (together makes a healthy extra A choice).

For a vegetarian green option I added 2 chopped Quorn sausages for 2 Syns.
If doing extra easy, then you could swap Quorn sausages for sliced grilled lean bacon and the meal would then be Syn free!

Very yummy!

Spinach and Quark Cannelloni (SYN FREE ON GREEN AND EXTRA EASY)



Preparation time = approx 20 mins, cooking time = approx 30-40 mins at 150 degrees.

FREE ON GREEN AND FREE ON EXTRA EASY. Cheese on top is from your healthy extra A choice.

1) Defrost frozen spinach in microwave ( I used approx 15 balls of frozen spinach, which when mixed with the quark filled a box of cannelloni).

2) When spinach is completely defrosted mix in a pot of Quark.

3) Add salt, pepper and herbs to taste and mix all together.

4) Using a small tea spoon take small amounts of the mixture and fill the uncooked cannelloni. I find it easier and less messy to do this over the baking dish you will be using. Stand the uncooked cannelloni on its end and fill from the top, tapping the cannelloni to get the mixture to the bottom. When it is filled, place on its side in the dish. Continue this way so the filled cannelloni are lined up as in previous photos.

5) When all the filled cannelloni and flat in the dish, cover with passatta. I used 1 carton to cover a box for filled cannelloni in a medium to large baking dish. (no need to pre-cook the cannelloni as this will cook in the oven with the passatta and soften like lasagne sheets do).

6) Grate cheese over the mixture. I used 3 healthy extra choices for this medium to large dish. You don't have to use any, but it is yummy with the cheese on top.

7) Pre-heat the oven, and then cook on approx 150 degrees, for about 30-40 mins until the cheese is golden on top.

And then eat as much of it as you like as it is completely free!!! Nom nom nom nom!

I'm Rachel, and I love Slimming World!

I have lost 1.5 stone so far, and have about 4.5 stone to go to reach my goal. 
 
I started this blog as I love thinking up and trying new recipes on the slimming world plan,  as well as tried and tested recipes from the SW books and website.

Hopefully this blog will help others following the SW plan, to keep us motivated and excited by food!
